Healthy Fish and Chips

Recipe for Fish

Ingredients:Chef Can Usla

2 lbs. Cod or Haddock filet

1/2 cup plain breadcrumbs or panko

2 tablespoons parsley, finely chopped

4-5 garlic cloves, minced

1 Tablespoon dry oregano

1 Tbsp.  Extra virgin olive oil

Salt and Pepper

For garnish: Lemon wedge and chopped parsley

Instructions

  1. Preheat oven to 400 °F (375 °F if it is a convection oven)
  2. In a small mixing bowl, combine breadcrumbs, parsley, garlic, oregano and olive oil. Mix well.
  3. Line sheet pan with parchment paper. If you don’t have parchment paper, generously spray the pan with oil.
  4. Place fish filets on sheet pan and season with salt and pepper.
  5. Sprinkle breadcrumb mixture evenly over fish fillets.
  6. Bake the fish for 12-15 minutes (total time depends on thickness)

Recipe for Chips

Ingredients

2 Large baking potatoes (cut into strips like “fries”)

Note: After the potatoes are peeled and sliced, place them in a bowl of cold tap water. Soak for 30 minutes then pat dry with paper towels.

1 Tbsp. grated parmesan cheese

1/4 tsp garlic powder

1/4 tsp paprika

Salt and Pepper

1 Tbsp. olive oil

Instructions

  1. Preheat oven to 450 °F (425 °F if it is a convection oven)
  2. Mix all dry ingredients in a small mixing bowl
  3. After draining and pat drying potatoes, lay them flat on a sheet tray lined with parchment paper.
  4. Drizzle olive oil.
  5. Toss with the dry ingredient mix until they are all coated.
  6. Bake for about 30 mins or until golden brown
